Rishi Tea offers a selection of handcrafted Japanese matcha bowls, bamboo whisks and scoops for everyday enjoyment. Japanese green teas are best when made with water just under boiling hot. They also make refreshing iced teas. Try whipping houjicha powder into your favorite plant-based milk for a malty delight.

Matcha is a wonderful ingredient for cooking and baking, as it works well with both sweet and savory dishes. However, you don’t want to use your best Japanese teas when cooking or baking, as the high temperatures and other ingredients overpower the matcha’s vibrant grassy notes. It’s best to buy culinary grade matcha for cooking and leave the ceremonial grade and barista grade for drinking.

Black tea is heavily oxidized, which increases its caffeine level. Japanese green teas are partially oxidized and have less caffeine. However, matcha contains more caffeine because you’re consuming the entire leaf ground into a powder vs. drinking tea that has just been steeped in the leaves. Houjicha is a form of roasted green tea, so even though it brews a lovely dark amber color, it actually contains very little caffeine.
