About this tea
This reserve batch of Dian Hong black tea is made from the lightly rolled 1 bud and 2 leaves plucking standard known as the “Mao Feng” grade. It is an unusually small batch of tea we produced in an old school fashion using Sun-drying to bring out deep sweetness and wild fermentation flavors accented with notes of honey nectar and wildflowers. The mellow and thick sweetness of this Dian Hong is lively and dynamic. The batch is perfect in heavy doses for gaiwan gong fu cha brewing sessions.
Sun-drying is one of the original ways that tea producers used to dry their tea. Using the Sun’s light and energy to finally dry the tea predates the modern and more widespread practice of oven baking tea. The sunlight and the slow rate of natural drying creates a uniquely sweet fermentation taste and aromatic complexity that only the Sun’s natural UV light can coax from the tea leaves. The Sun-dried black tea has a vitality that is similar to Pu’er tea in that it develops with age and transforms over time. The nuances of sun-dried tea are nectarean and freshly floral when compared to oven-baked teas that have more focally fixed aromatic notes and caramelized malty sweetness.

Wa Shan Ecological Tea Garden sits in Lincang, on the border with Myanmar (Burma) in southwestern Yunnan. Surrounded by a lush and biodiverse mountainous region, this certified organic tea farm is one we have been working with since 2013. Wa Shan is a famous tea mountain since ancient times named after the Wa ethnic minority who have farmed tea in this region for more than a thousand years.

Traditional Tea Preparation
Add 5-7g to a gaiwan or gongfu teapot (per 150mL-200mL).
Use 212°F water.
Do not rinse this tea.
Infuse the first brew for 2-3 minutes.
Repeat several times until the flavor and aroma of the tea dissipates. As the brewing session ensues, increase the infusion time to coax out the body and strength of the final infusions.
